Banana Bread 1.0
Mmm....I should probably title this 2.0 since the original recipe would be 1.0....but that might be logical and we just don't do that here. ;) Anywho I've started tinkering with my tried and true banana bread recipe to give it a little extra something something. The bread came out moist and very tasty, but it cried out for some lemon or orange zest....something to toss in next time for sure. This recipe really mixes up fast so it's super easy to put together in a pinch.
Banana Bread 1.0
1/3 cup tub margarine
1/4 cup sugar
1/4 cup raw honey
2 eggs
1 3/4 cups all purpose unbleached flour
2 tbls milled flax
2 tbls wheat germ
1 tsp baking powder
1/2 tsp baking soda
1/2 cup non fat plain yogurt
2 ripe medium bananas, mashed (about a cup)
In a mixing bowl, cream together margarine, sugar, and honey. Beat in eggs. Beat in baking soda, baking powder, milled flax, wheat germ, and flour. Add yogurt and mashed bananas. Pour into greased loaf pan and bake at 350 for 40 to 45 mins or until bread tests as done. Cool before slicing.

everybody needs to learn to make banana bread, because everyone always has leftover bananas....I have a bunch in my freezer as we speak! thanks for a great recipe!
