Coconut Macaroons

I ran across this recipe in the back of a Taste of Home issue and I couldn't resist giving it a whirl.  It's one of those recipes that require zero effort to zip together.  The only thing it was missing was some chocolate....a few chocolate chips in the mix or some drizzle across the top would have been perfect.


Coconut Macaroons

2 1/2 cups sweetened flaked coconut
1/3 cups unbleached all purpose flour
1/8 tsp salt
2/3 cup sweetened condensed milk
1 tsp vanilla

Combine the coconut, flour, and salt.  Add milk and vanilla and mix well.  Drop by spoonfuls on greased baking sheet.  Bake at 350 for 15 to 20 mins or until golden brown.  Cool on sheet for 5 mins before removing to racks.

  2. These look wonderful and so easy!! I am weak for anything coconut and am a bit of a purist when it comes to baking with it, so these would be perfect for me. Shockingly, I have never made macaroons before!

  7. What a wonderful quick and delicious recipe. Ideal as a tasty yet speedy treat at the last minute. With these macaroons there's no excuse for reaching for store-bought biscuits ;-)

  28. YESSSS!!! I'm glad I popped by. Have this big amount of grated coconut and ran out of recipes to make. At first I thought of extracting the milk to keep, but this is waaay better! Thanks!

  29. Macaroons are my dad's favorite cookie. I've not seen a recipe using sweetened condensed milk, but it sounds fantastic. I'll be giving it a try!
