I ran across this recipe in the back of a Taste of Home issue and I couldn't resist giving it a whirl. It's one of those recipes that require zero effort to zip together. The only thing it was missing was some chocolate....a few chocolate chips in the mix or some drizzle across the top would have been perfect.
Coconut Macaroons
2 1/2 cups sweetened flaked coconut
1/3 cups unbleached all purpose flour
1/8 tsp salt
2/3 cup sweetened condensed milk
1 tsp vanilla
Combine the coconut, flour, and salt. Add milk and vanilla and mix well. Drop by spoonfuls on greased baking sheet. Bake at 350 for 15 to 20 mins or until golden brown. Cool on sheet for 5 mins before removing to racks.
Yum, I have been craving something with coconut and these might just be the ticket!
