Jelly Bean Cookies
I had to make these Jelly Bean Cookies when I saw them on In Katrina's Kitchen. Jelly beans in cookies...brilliant! Mine are a might bit homley looking, but darn tasty. A nice mix of chewy and crisp textures.
I totally put in too many jelly beans. It was a combination of being stuck in chocolate mode where more is better and not wanting any jelly bean leftovers....because of course I would be compelled to nosh the leftovers. :) I adjusted the recipe to a more reasonable jelly bean amount. ;) Less is more in this case.
So many choices of jelly beans in the seasonal display....I went with Hawaiian Punch personally. Real fruit juice equals healthy right? Ehehehehehe.
Jelly Bean Cookies
1 cup unbleached all purpose flour
1/2 cup sugar
1/3 cup brown sugar
1/2 cup butter
1 egg
1/2 tsp baking soda
1/8 tsp salt
1 tsp vanilla
1 cup jelly beans
Blend together butter, sugar, and brown sugar until creamy. Mix in egg and vanilla. Mix in flour, baking soda, and salt. Fold in jelly beans. Drop by spoonful onto greased cookie sheet. Bake for 15 minutes or until golden brown.

ReplyDeleteHomely? No way! Look at all of those fun colors! I love this idea :) The question is, do you mix the flavors, or separate them so the cookies are specifically flavored!
