Oatmeal Chocolate Chip Mini Loaves
I found this lovely recipe over at Small Town Oven. This is a great one to use when looking for a hearty, filling treat. A fairly healthy bread unless you're counting the chocolate...which is why I tossed in dark chocolate chips.....the healthy chocolate...snicker. I nommed with great joy....ehehehe.
I made mini loaves instead of muffins because that shape amuses me more at the moment.
Oatmeal Chocolate Chip Mini Loaves
1 cup old fashioned oats
1 cup skim milk
1 egg
1/3 cup brown sugar
1 1/2 tsp vanilla
1/4 cup butter
1 cup white whole wheat flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
1 cup dark chocolate chips
In a small bowl, mix oats and 1/2 c milk. Set aside for 5 minutes.
In a separate bowl, cream butter and brown sugar together. Add egg and vanilla. Mix in moistened oats, flour, baking soda, cinnamon and salt. Stir in remaining 1/2 cup milk. Fold in chocolate chips. Pour batter into greased mini loaf pan and bake at 350 for 18-20 minutes. Turn out onto racks to cool.
Look at all those beautiful chocolate chips. I'm thinking some diced apple might be a neat addition next time.

ReplyDeleteOhhh, they look so good. I love making mini loaves. I think they tend come out a lot moister. I just made some lemon-blueberry mini's. Great minds think alike - lol!

This recipe work great with muffin tins. You won't have any problems changing the pan out.
