Peanut Butter Banana Bread
I ran across this wonderful, tender bread on Sweet Pea's Kitchen. I modified the recipe a bit...it's a compulsion. ;) This loaf originally had a lovely peanut butter glaze....I omitted this step since I was making it just for me....if I were sending it out like I normally do I'd have glazed away happily. ;)
I think the only change I would make would be to reduce the sugar and brown sugar down to 1/3 cup each...I think that would be plenty of extra sweetener.
Peanut Butter Banana Bread
1 1/2 cups mashed banana
1/3 cup plain fat-free yogurt
1/3 cup creamy natural peanut butter
3 tbls oil
2 eggs
1/2 cup sugar
1/2 cup brown sugar
1 cup unbleached all-purpose flour
1/2 cup white whole wheat flour
1/4 cup ground flax
3/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/8 tsp allspice
Beat together the bananas, yogurt, peanut butter, oil, and eggs until well mixed. Add sugars. Mix in both flours, flaxseed, baking soda, salt, cinnamon and allspice. Beat just until blended. Pour batter into greased loaf pan and bake at 350 for 60 to 70 minutes. Cool in pan for 10 minutes before transferring to a wire rack.
Beautiful slices...if only I remembered the Nutella tucked in the cabinet and slathered some on.

ReplyDeleteI'm not big on peanut butter and banana, but Dudette and Hubby will sit together and just put one on the other and much happily that way. They would adore this (which means I definitely have to give it a try!). Thanks for sharing the recipe.
ReplyDeletePeanut butter and banana... just about two of my most favorite things in the world! This bread sounds fantastic. My stomach is rumbling for some breakfast right now, and I would give and arm and a leg for a slice of this.

ReplyDeletebananas are like magic in desserts, makes everything so moist! I just used some in an ice cream (post coming up tonight). All you need now is to fry the bread and Elvis would be so happy!

I love peanut butter and banana on a sandwich, so I think that they would be amazing in a cake.
