Chewy Chunky Blondies
I've had such a butterscotch craving lately that I had to make these bars when I saw them at Sweet Pea's Kitchen. They are incredibly rich so a small piece fixed me right up.
Chewy Chunky Blondies
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
1 1/2 cups brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup dark chocolate chips
1 cup butterscotch chips
1 cup sweetened shredded coconut
Cream together the butter, sugar, and brown sugar. Add the eggs and vanilla. Mix in flour, baking powder, baking soda and salt. Fold in chocolate chips, butterscotch, and shredded coconut.
Pour batter into greased 9x13 pan and bake at 325 for 40 minutes, or until bars test as done. Cool before slicing into squares.

Oh, this sounds just right to me. A little bit of chewy texture in there, and also chunky bits to get your teeth into! Way to go!
ReplyDeleteCoconut is an awesome addition, I love coconut, goes well with chocolate and butterscotch/caramel. You are lucky to have a stock of those blondies within reach:)
ReplyDeleteI cannot get enough blondies lately! Love the coconut addition. Have you ever used coconut flour in baking? I may try these with a little of that subbed in and some coconut butter to further bring out the flavor!
