Almond Coconut Granola Cereal


I usually like my granola in bar form, but sometimes I crave a cereal version.  These crunchy, chunks of granola do make a tasty little snack all on their own though.  I found myself nibbling on a handful when the munchies hit.  The toasted coconut...it calls to me. 

Not a ton of sugar in this recipe...I wasn't keen on tossing in a bunch of oil or butter either.  Simple and delicious was the goal.


Almond Coconut Granola Cereal

3/4 cup old fashioned oats
1/4 cup slivered almonds
1/4 cup oat bran
1 tbls wheat germ
1/4 cup shredded sweetened coconut
1/8 tsp salt
2 tbls raw honey
1 egg white

Mix together all the dry ingredients.  In a small bowl, beat the egg white lightly.  Stir in honey.  Pour the honey mixture over the dry ingredients and toss together.  Pour onto a greased cooking sheet and bake at 325 for 20 minutes, stirring occasionally.  Serves two.

  3. I do love granola with my yogurt! The coconut adds such great flavour! looks like a yogurt worth granola to me...also perfect for munching on by the handful!!

  5. Ive been chowing down on some cereal lately. Trying to be all healthy like and eat breakfast (ha!). This mix sounds great. I've never had granola in milk but I do love both so Im sure its awesome.

  21. I haven't seen a granola bound with an egg white instead of oil. I am definitely going to have to try this out. It's a great combination of ingredients.

  22. What can be more healthy than homemade gronola cereal? This looks very delicious. Love that you put shredded coconut. That's one of my favorite things.
