I ran across this recipe on the Taste of Home website. It demanded to be made. Oreo cookies and cheesecake....clearly a match made in heaven. Quite tasty. I managed to hold back on the garnish this time...though the top would look sweet with some chocolate covered Oreo pieces I think. ;)
Don't neglect the baking sheet under the springform while baking....definitely a must.
Chocolate Cookie "Oreo" Cheesecake
1-1/2 cups Oreo Cookie crumbs, about 16 to 20 cookies
1/4 cup butter, melted
4 - 8oz packages light cream cheese, softened
1 cup sugar
1 1/2 cup milk chocolate chips, melted
1 tbls vanilla
20 Oreo cookies, coarsely broken up (less is fine, I used whatever was left in the pack)
Combine Oreo crumbs and butter and press into a springform pan. Chill until ready to pour in the filling.
Beat cream cheese and sugar together until well mixed. Beat in melted chocolate and vanilla. Add eggs, mixing until just combined. Fold in broken up cookies. Pour over crust.
Place pan on baking sheet and bake for 50 to 60 mins at 325, or until center is mostly set. Remove from oven and loosen rim of pan with a butter knife. Cool and then chill before slicing.
