Chocolate Chocolate Chip Mini Pound Cakes


What do you do when you find an amazing yellow pound cake recipe? Make a delicious chocolate version of course. Everything is better with chocolate. I'm almost positive that's an unwritten law.


Chocolate Chocolate Chip Mini Pound Cakes

1 cup butter,  softened
3 cups sugar
6 eggs
1 tsp vanilla
1 cup heavy cream
2 1/2 cups flour
1/2 cup cocoa
2 cups semi sweet chocolate chips

Beat together butter and sugar. Add in eggs, two at a time. Mix in vanilla and cocoa. Mix in flour and cream alternately, beginning and ending with flour.  Fold in chocolate chips. Spoon batter into lined mini loaf pans (two cupcake liners work perfectly as a mini loaf liner) and bake at 325 for 45 minutes or until loaves test done. Cool on racks.

  1. Hm.. I usually make yellow cake, but keep thinking about chocolate version.. :) you are one step ahead!
