Spice Bars

I thought this recipe looked interesting for a base to make some spice bars. I ended up with more of a spice cake as the batter poofed up much more than expected though. They came out oh so tender though....very nice. Next time, bigger pan...ehehehe. Honestly, the mix of spices made me think of fall and pumpkin pie. Suddenly, I crave turkey.

Spice Bars

3/4 cup tub margarine
3/4 cup sugar
1/4 raw honey
1/4 cup molasses
1 egg
1 applesauce snack cup - no sugar added
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
2 1/2 cup unbleached all purpose flour
1 tbls sugar mixed with 1/8 tsp cinnamon

Cream together the margarine and sugar. Add in honey, molasses, egg, and applesauce. Mix until well combined. Add in baking soda, cinnamon, ginger, cloves, and flour. Blend well before pouring into greased 9x13 pan. Sprinkle cinnamon sugar mixture over top of the batter. Bake at 350 degrees for 20 to 30 mins or until done.
