Taco Pasta

I thought this was a neat recipe when I ran across it here. I made a few changes here and there to suit my taste buds. ;) It made a quick and tasty meal to zip together. I kept feeling like I needed a bowl of tortilla chips to scoop things up with though. ;) My taste buds just weren't used to the taco flavor mixed with noodles. I wouldn't have minded a bit of chopped romaine mixed up in my serving as part of the additional toppings.


Taco Pasta

1 lb 96% lean ground beef
1 onion, diced
1 tbls diced garlic
2 banana peppers, diced
1 14oz can no salt added petite diced tomatoes
2 tsp chili powder
2 tsp cumin
1 tsp oregano
1 tsp cajun seasoning
1/4 tsp black pepper
1/4 tsp red pepper flakes
1 1/2 cup dry macaroni
cheddar cheese
salsa

In a skillet over medium high heat, cook ground beef, onion, garlic, and peppers until the meat is browned. Stir in tomatoes and all the seasonings. Let the mixture simmer for about 10 to 15 minutes. Cook and drain macaroni noodles. Stir macaroni into the meat mixture when you remove it from the heat. Serve topped with cheese and salsa.
