I ran across this delicious recipe at Sweet Pea's Kitchen....she creates so many wonderful goodies. These bars are moist and incredibly tasty. Great dessert that whips together quick and easy. The only change I would make would be to add a little more powdered sugar to the icing to give it a firmer texture. I have so been craving sweet potato dishes lately and this hit the spot. Nom, Nom!
Sweet Potato Bars:
4 eggs
1 2/3 cups sugar
1 cup canola oil
1 3/4 cups mashed sweet potatoes*
2 cups unbleached flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Cream Cheese Frosting:
8 oz 1/3 fat cream cheese
1/2 cup Smart Balance 50/50 butter blend
2 cups powdered sugar
1 teaspoon vanilla extract
In a bowl mix together the eggs, sugar, oil and sweet potato until well combined. Add in flour, baking powder, cinnamon, salt and baking soda until just combined. Spread the batter into greased 13x9 baking pan. Bake at 350 for 25-30 minutes or until toothpick inserted into the middle comes out clean. Cool.
For frosting mix together the cream cheese and butter until smooth. Add the sugar and vanilla mixing until combined. Spread on cooled sweet potato bars. Cut into bars and chill until ready to serve.
*Mashed Sweet Potatoes - I peeled, then boiled two sweet potatoes before mashing.
Nom nom, is right! I love sweet potatoes and have never made sweet potato bars. This sounds fab!
