Double Chocolate Pudding


I ran across this recipe and used part of it to make a tasty, chocolate pudding.  I'm quite pleased with how it turned out.....double chocolate how I love you.  Bonus points for having no yolks.  I did add a little extra chocolate....I just can't help myself.  ;)

Spoon some pudding into pop molds to make some tasty, frozen treats.  Make sure to hide one of the frozen treats so they don't disappear unexpectedly....ahem.  Pop bandit!  I have been assured by my beloved they tasted delicious....eye twitch.....ehehehehe.



Double Chocolate Pudding

1 tbls unflavored gelatin (1 envelope)
1/3 cup boiling water
2/3 cup sugar
1/3 cup cocoa
1/4 cup cornstarch
1/8 tsp salt
3 cups skim milk
2 tsp vanilla
4oz dark chocolate chips, melted

In a small bowl, mix together the gelatin and the boiling water.  Stir until dissolved and then set aside.

In a saucepan, mix together sugar, cocoa, cornstarch, and salt.  Whisk in milk.  Cook over medium heat, stirring constantly, until mixture boils.  Remove from heat.  Stir in melted chocolate.  Stir in vanilla and gelatin.  Pour into a bowl and cover the surface with some plastic wrap to prevent a skin from forming.  Chill for a few hours to set.

  11. I have only had homemade pudding one time... and it was so fantastic I'm scared to try it myself. I have a feeling this recipe would be demolished in 5 minutes or less. :)

  12. You can never go wrong with double-chocolate ANYTHING, but pudding sounds especially yummy... and since fudgesicles are easily my most favourite frozen dessert ever, I love the fact that it makes chocolatey frozen pops too!

  32. OMG I want that bowl! And I want it filled with that pudding. It is a favorite treat of mine choco pud. I like the no egg cooking thang here, will have to try it. I am working on a healthy tofu version.

  36. Mmmmmmmm pudding. I wonder if you could use Splenda in place of the sugar and almond milk in place of regular milk to bring the calories down. Maybe I'll give it a go!
