Cocoa Nana Loaves
I found this recipe over at Return of the Yummy. Deep, intense chocolate flavor in these puppies.
The bread was good, but it was missing something. The fat content was a little low....some additional butter, sour cream, or yogurt would work.....but then I realized this recipe demands something different....so cream cheese, avocado, or even some stout would be the way I'd go next time. Avocado would just be plain fun. ;)
A little more chocolate chips next time too......cause there just is no such thing as too much chocolate.
I went with mini loaves to keep the bake time reasonable. Muffins would turn out beautifully as well.
Cocoa Nana Bread
2 cups unbleached all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup dark unsweetened cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1 tsp cinnamon
1/2 cup butter
3/4 cup sugar
1/2 cup brown sugar
2 eggs
3 ripe bananas, mashed
3/4 cup soured milk
1/2 cup dark chocolate chips
Cream butter and sugars together. Add eggs. Beat in both cocoa powders. Mix in the mashed bananas and milk. Add in flour, cinnamon, baking powder, salt and baking soda. Fold in the chocolate chips. Spoon batter into greased, mini loaf pan. Bake at 350 for 30 minutes or until bread tests as done. Cool on a rack.

This recipe is really unusual.Did not even know there are 2 types of cocoa powder.avocado is a great idea but based on the pic they look chocolaty perfect.

ReplyDeleteThose look so intensely rich and dark. It would be very interesting to see this made with avacodo! I also agree with the more chocolate chips....why wouldn't you add more of those? The loaves look great!
ReplyDeleteI carefully read the ingredients, and I'm very impressed with the portions of the two kinds of cocoa, and also chocolate chips. The mini loaves are absolutely yummy, and I'm already thinking ahead...what a nice gesture for little Christmas loaves wrapped up with pretty ribbon!

ReplyDeleteChocolate in all its clory!! The mashed bananas and the soured milk was a suprise. I would add yougurt instead of milk. It really sounds delicious!

ReplyDeleteChocolate and banana are so good together! I've made a chocolate banana muffin before, and the banana works its magic in them. Adding some stout sounds interesting too.
