Marinated Beef and Vegetables

I wanted to play around with a diet coke marinade just because is seemed like a fun thing to try out. ;) It turned out very tasty and the diet coke actually blended in quite well....if I didn't know I put it in the recipe I wouldn't have been able to tell.


Marinated Beef and Vegetables

1 lb lean beef, sliced
1.5 tbls oil
2 stalks celery, chopped
1/2 cup carrot sticks
1 onion, chopped
1 tbls garlic
2 cups broth
8 oz diet coke
3 tbls apple cider vinegar
1 tbls lemon juice
2 tbls low salt soy sauce
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Mrs. Dash Chipotle Seasoning
1/4 tsp Mrs. Dash Garlic & Onion Seasoning
2 tbls flour
1/2 tsp ginger
1/4 tsp dry mustard
1/2 tsp cajun seasoning
1/4 tsp red pepper flakes
1/8 tsp black pepper

Take sliced beef and put it in a ziplock bag with diet coke, 1 tbls vinegar, onion powder, garlic powder, and both Mrs. Dash Seasonings. Let the beef marinate for at least 2 hours in the fridge.

Drain beef marinade into a bowl. Pour beef into skillet with onion, celery, carrots, garlic, and oil and cook on med-high heat until meat is cooked and vegetables are tender. While the beef mixture is cooking combine flour, ginger, mustard, cajun seasoning, black pepper, and red pepper flakes. Sprinkle seasoning mixture over beef and stir together. Add in broth, reserved marinade liquid, lemon juice, soy sauce, and vinegar. Bring to a boil and then reduce heat to medium-low. Continue cooking until liquid reduces down and thickens. Remove from heat and serve over rice.
