Chocolate Swirl Bundt Cake

This is one of my favorite cakes from the Hershey's cookbook.  I get mad cravings for it from time to time.

One quirk of this particular cake is that it can run over the pan slightly while baking.  I solved that problem this time by making 3 little swirl cupcakes to reduce the amount of batter.  This might not happen to you, but prep for it just in case by at least putting something underneath the pan to catch any rogue batter.

A cool finishing touch would have been a pile of coconut haystacks in the center of the cake.....this didn't occur to me until after I finished it up, but I will remember it for next time.  ;)


Chocolate Swirl Bundt Cake

Cake:
1 cup Smart Balance 50/50 butter blend
2 cups sugar
2 tsp vanilla
3 eggs
2 3/4 cups unbleached flour
1 tsp baking soda
1/2 tsp salt
1 cup sour skim milk (mix 1 cup milk with 1 tbls lemon juice)
1 cup Hershey's syrup
1/4 tsp baking soda
1 cup sweetened coconut flakes

Fudge Glaze:
14oz can non fat sweetened condensed milk
6oz milk chocolate chips
6oz semi sweet chocolate chips
1 tsp vanilla

Cream together butter and sugar.  Add in eggs and vanilla and mix well.  Combine flour, 1 tsp baking soda, and salt in a small bowl.  Mix the flour and the sour milk alternately to the butter mixture.  Measure 2 cups of the batter into another bowl and stir in the Hershey's syrup and 1/4 tsp of baking soda.  Fold coconut into the remaining vanilla batter.  Pour vanilla batter into greased bundt pan.  Pour the chocolate batter over top of the vanilla, but do not mix.  Bake at 350 for 60 minutes or until cake tests as done.  Cool 5 minutes in pan before removing it.  Cool then chill cake.

Mix together sweetened condensed milk, chocolate chips, and vanilla.  Microwave for about one minute, stirring after 30 seconds, until mixture is smooth and melted.  Spoon fudge over chilled bundt letting it drizzle down the sides.  (If you wish a thinner glaze...use a few tbls milk to thin the chocolate before drizzling.)  Let the cake set for a couple minutes.  Spoon some of the remaining fudge into a ziplock bag with one of the edges nipped off.  Pipe some lines across the cake to give it a finished look.

You have to love a cake that self swirls.  ;)  Pretty with zero effort on my part....love it!

  8. Stunning!!! Absolutely stunning! I think all of us would jump through the screen now if we could :) . I have that hershey's book and have not used it..you have def inspired me to now. Love your idea about trying it with coconut haystacks! Beautiful job on this one!!

  18. My BF was recently talking about a chocolate swirl Bundt cake that his grandmother used to make... He'd be over the moon over this recipe! I think I might bake one up for Valentine's Day as a special treat for him. :)

    I think you're right, the coconut haystacks in the center would make this cake sing... kind of like a monster Mounds Bar!

  20. The cookbook is from 1989...Hershey's Chocolate Cookbook....it is high on my list of favorite cookbooks...which rates it a prime spot on the kitchen counter instead of the bookcase. :)
