Bran muffins....a nice change of pace after all the rich Christmas goodies....plus I used leftover cranberry sauce so it was a double win. I found the recipe on the back of the Quaker Oat Bran box....quite convenient I know. ;) I tinkered with it a bit of course. The only change I think I would make for next time would be to use the entire egg, not just the white. The muffins don't look like much, but they were pretty tasty. I must dub them....humble, little muffins.
Cranberry Oat Bran Muffins
1 cup Oat Bran, uncooked
2 tbls ground flax
2 tbls brown sugar
1 tsp baking powder
1/2 cup skim milk
1 egg white, lightly beaten
1 tbls raw honey
1 tbls oil
1/4 cup cranberry sauce
Mix together oat bran, flax, brown sugar, and baking powder. In another bowl mix together milk, egg white, honey, and oil. Pour into dry ingredients stir until just combined. Fold in cranberry sauce. Spoon into small muffin cups until 3/4 full (greased or lined) and bake at 425 for 15 to 20 minutes. Makes 6 muffins.
I love these my son will too!
ReplyDeleteThe perfect thing to do with all those leftover cranberries! Now I just need some oatbran :)
ReplyDeleteMy partner will love this and I still have 1/2 jar of cranberry sauce
ReplyDeleteThese are a good start to detoxing after all the holiday madness!
ReplyDeleteYeah! Something besides a sweet baked treat! I'm saturated, sadly. These look delicious and a way to kick start some healthier eating. Thanks!
ReplyDeleteGreat! I finally found a recipe for the rest of the cranberry sauce sitting in the fridge! Thank you!
ReplyDeleteI've never tried to make bran muffins, but I think that might be changing!
ReplyDeleteI tried switching out bananas for cranberry sauce once. My son loved the muffins but they just didn't rise or look the same. He ate every last one though. These do look tasty!
ReplyDeleteI could use something like this, this morning. I do have leftover cranberry sauce, I can honestly say sweets don't sound good at the moment. I think I have a cookie hangover.

Healthy and baking is a fantastic combination.

Yippee something sweet and healthy! Nice change of pace. I guess it is time to take it down a bit.
ReplyDeleteThose muffins do look good, especially after all the heavy stuff during Christmas!
ReplyDeleteI agree, bran and other healthy food is definitely called for after the crazy calorie frenzy of December.
ReplyDeleteSounds like a great way to use leftover cranberry sauce. A perfect after Christmas breakfast!
ReplyDeleteI've never thought to use cranberry sauce for muffins. These look yummy.
ReplyDeleteThose sound delicious! I'm really liking the idea behind them, something lighter and less heavy and rich. Plus, the flavors sound really good.
ReplyDeleteI love how you dressed up bran muffins with the cranberry sauce! And I'm with you about being ready for some lighter fare :)
ReplyDeleteThose do look delicious. Not to get specific, but after all the richness of the holidays, I'm sure we could all use some oats and bran in our diet (if you get my drift). Thanks for passing along the recipe.
