Oatmeal Coconut Candy Squares

I think this treat needs a more impressive name, but I drew a blank....ehehehe....I settled for descriptive. The flavor combination from all the different layers is amazingly good. I was a little worried about the hint of cinnamon in the crust but it meshed wonderfully. Must have these again...gimmie....gimmie!!! I am seriously wishing I had tucked a couple of these into the freezer for another day.


Oatmeal Coconut Candy Squares

Crust:
2 cups old fashioned oats, 1 cup of which ground fine
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 teaspoon salt
1/3 cup melted tub margarine

Mix oats, brown sugar, cinnamon, and salt in a bowl. Stir in the melted margarine. Press mixture in a greased 9x9 square pan. Bake at 350 degrees for 15 to 20 minutes until done. Cool.

Cream Cheese Layer:
8 oz reduced fat cream cheese
1/2 cup mini semi sweet chocolate chips
1 batch of honey oatmeal cookies

Bake 1 batch of honey oatmeal cookies. Cool. Use a food processor to turn the cookies into crumbs. Divide crumbs into two portions, setting one aside for topping. Mix together the cream cheese and the other half of the cookie crumbs. Stir in semi sweet chocolate chips. Spread mixture over cooled crust.

Coconut layer:
14 oz shredded coconut
7 oz non fat sweetened condensed milk
2 cups powdered sugar
1 tsp vanilla
1/4 tsp salt
12 oz milk chocolate chips

Mix together the sweetened condensed milk, coconut, vanilla, and salt. Stir in powdered sugar. Spread mixture over the cream cheese layer.

Melt milk chocolate in the microwave, stirring often to prevent overheating. When chips are melted and chocolate is smooth spread over top of the coconut layer. Sprinkle the remaining cookie crumbs over top of the chocolate, pressing them down lightly into the chocolate. Chill before cutting into squares.

These squares are a bit thick. I toyed with switching to a 9x13 pan but I would have to double the cream cheese layer. I think I'm content as is.
